Mahi Mahi (aka Dorado)
Get it while you can. Firm texture, light, sweetly moist meat with solid flake and moderate flavor. Extra-lean fish. Wild-caught, sold by the pound (i.e. a quantity purchase of "1" is one pound).
Mahi Mahi is usually found in the warmer southern waters, but often gets pushed North by the Gulf Stream. A small amount of Mahi Mahi is caught by local New England fishermen while they are fishing for tuna and sword.
