The purchase of a quantity of "1" is the purchase of 1/2 pound (8 oz.) of shallots, which is about three or four little shallot bulbs. Unless you're preparing a side dish of roasted caramelized shallots, it's unlikely that your recipe needs more than 1/2 pound of shallots.
