Serving Suggestions

Pan-sear skin-side down in a cast-iron until the skin is completely crispy and the fish is mostly cooked through — flip for just 30 seconds and serve skin-up. Or marinate in citrus and herbs for 30 minutes and grill over direct heat for 4–5 minutes per side.

Here's the straight skinny

Many home cooks regard fish skin as icky, removing and discarding it either before cooking, or after the fish is cooked skin side down. Noooo! Score the skin on the fillet, rub with a mix of herbs, pepper and salt, or use a wet marinade like Teriyaki sauce or Italian dressing. After refrigerating for at least half an hour, bake the fillet skin side up at 375-400°. The skin is just as good, and tastes similar to, crispy chicken skin.

A March Delight!

What a wonderful surprise to have fresh & delicious Striped Bass in March when this fish is normally not available! This was a gourmet delight with close-your-eyes goodness. If you love striped bass or have never tried it, do it!! Thank you Svenfish.
