"Dry" is the seafood industry term for natural scallops, which have not been treated with phosphates. Natural scallops have a slightly tan, or "vanilla" color.

The best scallops
These scallops were delicious and delivered to my home very fresh.
Ordered some scallops to have with cauliflower risotto. These are not even the giganto and they are large. Amazing texture, sweet tasting. Can't wait to get more!
