Fab whole branzino

Just salt baked 2 whole branzino from Svenfish. Exquisite. Simply coat the skin with olive oil, stuff with fresh herbs and pack in a mix of 4 cups of seasalt with 1/2 cup water. Bake 1/2 hour (130 F internal temp). Remove salt tomb, skin, de-bone and serve with lemon/paprika. Each fish was about 1.5 lbs. Super fresh as always. Fish benes make great stock.
