Commercially known as "Rack", popular for making fish soup, bone broth, fumet... not for the squirmy. Most whole fish carcasses are from cod or haddock, and similar "ground fish". Actual species will vary.
One unit is approximately 2-3 pound package. Depending on timing during the week, as well as availability, this product may be delivered to you frozen.

I recently ordered a package of the fish heads/bodies/tails. Unfortunately, even though I specified in the notes, "Please include some heads in each package," there were no heads! I called them up and asked them about this, and they said that they can't really control what the workers on the dock include. They also said that next time, you should specify that you want your order DELAYED until heads become available if you want some. So, if I order again, that's what I plan to do.
The fish made an excellent fish stock, and I am still enjoying the results.
This was a seafood stock as a base for my cioppino and a seafood stew and it made an amazing stock! Will be a repeat buyer
For years I have struggled to find fish bones/heads etc.. I live in a small town with no access to a good fishmonger or store.
The quality of the heads/bones made for a really good fish stock which I use for paella.
