This was brought to our attention by a friend who knows spices! A spicy-crunchy chili oil from Momofuku that takes the framework of Chinese chili crisp and rebuilds it with Mexican chilis. Three peppers do the work: puya for fruitiness, chile de árbol for smoky nuttiness, and japones for the heat that hangs around.

Compared to traditional Chinese chili crisps like Lao Gan Ma, the Mexican peppers give this a brighter, smokier profile — less floral, more punchy. The crunch comes from crispy dried garlic and shallots layered through the oil. Spoon it on eggs, ramen, dumplings, or anything that needs both heat and texture.
