Skate is a flat, ray-like fish caught in Atlantic waters — its wing portion is the only part eaten, and it’s extraordinary. The flesh forms distinctive fan-shaped strands that pull apart effortlessly, setting it apart from every other white fish. It’s a prized preparation in classic French cooking precisely because of that texture and its naturally sweet, mild flavor.

Serving & PortionsThe classic is meunière: dredge lightly in seasoned flour, sear in clarified butter until golden (about 3 minutes per side), remove to a plate. Add cold butter and fresh lemon juice to the hot pan, swirl until foamy, add capers, pour over the fish. Serve immediately.
