Cod is the fish that built New England. The Gulf of Maine was once one of the most productive cod grounds in the world, and the cod we source comes from those same cold, clean waters — sustainably caught by local fishermen and delivered fresh, never frozen. The loin is the thickest, most premium cut: firm, boneless, and ideal for preparations where you want the fish to hold its shape.
Mild, clean, and slightly sweet with thick, firm flakes. More robust than haddock, more neutral than pollock — the classic New England white fish that defines the region’s food culture.
Serving & PortionsClassic baked cod: place in a baking dish with butter, lemon, and white wine at 400°F for 12–15 minutes. For fish & chips: dip in a cold beer batter and fry at 375°F until golden. Cod is exceptional in chowder — add in the last 10 minutes of simmering.
