Baby octopus — tender, sweet, and perfect for high-heat preparations. One of the most underrated items in our case.
Wild-caught baby octopus — tender enough to grill directly without pre-cooking, unlike their larger counterparts. They take on char beautifully and stay succulent.
Marinate in olive oil, garlic, and lemon for 30 minutes. Grill over screaming-hot coals for 3–4 minutes per side. Or braise gently in a spiced tomato sauce until meltingly soft. Both methods produce completely different results, both excellent.
