Arctic char is a member of the salmon family, native to cold northern waters and farmed in Iceland’s pristine glacial systems. It sits uniquely between salmon and trout in flavor — less fatty than salmon, more complex than trout, with a delicate skin that crisps better than either. A fish that serious home cooks discover once and never stop ordering.
Milder and slightly leaner than salmon, with a clean, fresh flavor and gorgeous pink-orange flesh. The skin crisps to a delicate, golden crackle.
Serving & PortionsScore the skin in 3 places to prevent curling. Start skin-side down in a cold cast-iron, turn to medium-high, cook 5–6 minutes until the skin is deeply golden and crispy. Flip for 30 seconds only. Serve skin-side up — it’s half the point.
